In the Northern and Southern Dynasties(AD 420 to 589) , “grilled duck” had begun to be recorded in a book. In the South Song Dynasty (AD 1127 to 1279), grilled duck had become the famous food in Hangzhou. Please note that Peking duck had not yet appeared.Then, because Kublai Khan( a grandson of Genghis Khan)’ s armies conquered the Song Dynasty in 1279, the technology of grilled duck was introduced into Beijing. From that time on grilled duck became one of imperial meals. The Ming Dynasty(AD 1368 to 1644), grilled duck was officially named Peking duck. As social advances anazingly , Peking duck was widely known .
